I also made a batch of chicken salad that me and T have been eating all week. I used a rotisserie chicken from the store that you can get cold and half price from the previous day. It is a really cheap way to go. I had to consult my g-ma for her recipe and my product was a pretty close match to hers, except for the dryness from it being a rotis. I also made some potato chips in the oven with fresh rosemary. I used the mandolin that findingclarity me for my birthday. It slices the tatos really thin. I always use the guard because of a very vivid memory of something involving my fathers finger tip and a salad.
Last weekend I gave the pitas a second try. I was disappointed the first go around when none of the pitas puffed up with their famous pocket inside. I tried of different method of rolling them out, or rather actually rolled them out instead of smashing with my fist. It seemed to do the trick.
Last but not least..... I have a job. In the span of 4 days I had a phone interview, in person interview, sample teaching lesson and a job offer. The people I met at the school, including the students, seem pretty great. It is a very high achieve charter school in Newark. I will be teaching 8th grade science. No doubt I am going to become a way better teacher. I start orientation (I think there will be five weeks of it) on Monday. I am very excited. I don't want to get too in depth about it, but just say that this is going to be a very different experience than the past two years.... in a good way.
