Plus, it's a great reason to make homemade noodles (using our new mixer attachments) and a chocolate cake (using our new mixer).
Just so everyone knows, this mixer will be perpetually new. Unless I stop being excited about it one day... and I doubt that will happen. We also need about 12 of those bowls so we don't have to be constantly washing the one we have!
Casy made the noodles (and soup) and I made the cake. And together we ate, celebrating us in our newlywed state.
-:- Single Layer Chocolate Anniversary Cake -:-

Ingredients
1 1/2 c. flour
1/3 c. cocoa
1 tsp. baking soda
1 c. sugar
1/2 tsp. salt
1 c. brewed coffee
1/3 c. light olive oil
1 1/2 tsp. vanilla extract
1 tbsp. balsamic vinegar
Preheat oven to 400 degrees. Butter and flour an 8-inch pan.
Mix dry ingredients. Mix wet ingredients separately, then mix the wet ingredients into the dry ingredients until just smooth.
Pour batter into the prepared pan and bake until a toothpick comes out clean, 25-30 minutes.

I promise I'll do something non-chocolate next time! But this was great. I thought the coffee and/or the balsamic would have a stronger flavor in the cake, but both were subtle and wonderful. The chocolate flavor kind of popped, if that makes sense for a plain chocolate cake. I served this with freshly whipped cream and blackberries. I also had to bake this for about 32 minutes, but that's probably just my oven.
